I am traveling to Spain and Portugal - Barcelona, Madrid, Granada and then traveling by car along the southern coast up to Lisbon. I am interested in any woodworking/craft "must see" shops, galleries, festivals. Will be going in late October. Any thoughts will be appreciated.

Take a day to see some of the Gaudi architecture in Barcelona, just as inspiration. Awhile back they used to let you climb up into the unfinished spires of the cathedral - well worth doing.

I second the Gaudi experience. I found a 'home' of his and the gardens he designed fascinating.
Barcelona is a great town.

There is a Carriage Museum in Lisbon, Portugal. It is absolutely amazing work these people accomplished. It is close to the cruise ship terminals. If I remember correctly, it is just to the east of the main strip (walking, shopping area). Watch out for pick pocketers. I must have had 100 dudes trying to sell me "coca" and "hashz". Enjoy the sites.
