wedge for wedge tenon

Both the table by Garry Bennett and the table by Gary Ragowski featured in FW use wedged tenons, is this wedge tapered on both edges, and would a taper on only one with the other being straight and placed against the upright also work, and wouldnt this simplify the mortise. Is there something I'm not understanding  about the wedge and how it functions, I would appreciate your help to clarify my muddled thinking.

The "single-sided" wedge is square only with respect to the end, which gets trimmed off. In relation to the centerline of the wedge, both sides are tapered.
